Ingredients

For 4 pancakes:

  • 2 eggs
  • 30g sugar
  • 100g yogurt
  • 100g cake flour
  • 1 teaspoon baking powder

Additional Ingredients:

  • Butter, as needed
  • Maple syrup, as needed

Preparation

In a mixing bowl, separate the egg yolks from the whites.

Whisk together the egg yolks and 10g of sugar. Stir in the yogurt until fully mixed into the batter. Add the flour and baking powder into the bowl with the egg yolk mixture. Mix until smooth and no lumps remain.

In a separate clean bowl, beat the egg whites with a whisk or hand mixer until frothy. Gradually add the remaining 20g of sugar while continuing to beat the egg whites until stiff.

Gently add the whipped egg whites into the batter in three separate additions, taking care not to deflate the mixture. This step helps to lighten the batter and get fluffy pancakes.

Turn on the abien MAGIC GRILL to the LOW setting.  Add a small amount of butter to grease the surface. Pour a ladleful of batter onto the skillet, spreading it slightly to form a round pancake. Cook the pancakes on LOW until bubbles form on the surface and the edges begin to set, about 2-3 minutes. Carefully flip the pancakes and cook for an additional 1-2 minutes on the other side until golden brown and cooked through.
